Shrimp Nachos

Nachos with Shrimp

Ingredients

  • 1 Bag - Corn Tortilla Chips (Recommended: King Soopers Made Fresh)
  • 12-20 - Shell-On Extra Large Easy Peel Raw Frozen Shrimp (Recommended: Sand Bar)
  • Butter
  • Garlic Powder
  • 2 Stalks - Green Onion
  • Mexican or Taco Blend - Shredded Cheese
  • Queso Quesadilla - Shredded Cheese
  • Cilantro
  • White Onion
  • Fresh Jalapeno
  • Sour Cream (Optional)
  • 505 Southwestern Green Chile (Medium)
  • 2 - Avocados
  • 2.25 oz - Sliced Ripe Olives

Directions

  1. Remove shrimp from freezer and thaw under cold water for 10-15 min
  2. While shrimp is thawing, dice the white onion, cilantro, fresh jalapeno and green onion
  3. Mix the white onion and cilantro together, put all chopped vegetables to the side
  4. Once shrimp is thawed, remove tails, clean and pat dry
  5. Bring a pan to low/med heat. Add butter and garlic powder.
  6. Once butter is melted, add shrimp. Cook shrimp flipping it over until done (Approx. 10 min). Add more garlic powder/butter as necessary
  7. Pre-heat oven to 350F
  8. Lay out pan with foil. Add layer of single chips.
  9. Add shredded cheeses over top of chips, followed by onion/cilantro mix, jalapenos, olives and green onions
  10. Once shrimp is done, remove from pan and slice with sharp knife to cut each shrimp into 4 pieces
  11. Add layer of shrimp on first layer of chips
  12. Repeat steps 8-11 for another layer
  13. Put nachos in oven for approx. 8-10 min (Checking in to make sure cheese doesn’t harden too much)
  14. Cut avocados and mash into guacamole (Optional add mix)
  15. Remove nachos from oven and serve. Add green chile, sour cream and guacamole as appropriate
