Vodka Pasta Sauce

Ingredients

  • Pasta Noodles - Rigatoni or Penne
  • 2 Tbsp - Olive Oil
  • 2 Oz - Vodka (Titos, Summum, etc..)
  • 1/2 Yellow Onion - Diced
  • 4-6 Cloves - Garlic finely grated/minced
  • 1 Cup - Heavy Cream
  • 4.5 Oz - Tomato Paste
  • 1/2 Cup - Parmesan/Romano cheese grated
  • 1/2 Tsp - Red Pepper Flakes
  • Fresh Basil to garnish
  • Salt to taste

Directions

  1. Bring a large pot of water to a boil. Add a small handful of salt
  2. Cook pasta for 10-13 minutes until al dente and reserve 1 cup of water for later
  3. Heat the oil in a skillet over medium high heat
  4. Mince for finely dice the onion, add to the skillet and sauté for 5 minutes
  5. Add minced garlic, salt and red pepper flakes. Stir and cook for another 2 minutes
  6. Add tomato paste and stir heavily - flattening out in pan for 5 minutes
  7. Deglaze the pan with vodka, stirring constantly and add heavy cream. Stir until sauce is smooth and creamy
  8. Drain pasta but do not rinse. Add pasta to the sauce with the reserved water and stir over medium heat until it starts to thicken
  9. Serve immediately w/ basil garnish and grated cheese
