
Vodka Pasta Sauce
Vodka Pasta Sauce
Ingredients
- Pasta Noodles - Rigatoni or Penne
- 2 Tbsp - Olive Oil
- 2 Oz - Vodka (Titos, Summum, etc..)
- 1/2 Yellow Onion - Diced
- 4-6 Cloves - Garlic finely grated/minced
- 1 Cup - Heavy Cream
- 4.5 Oz - Tomato Paste
- 1/2 Cup - Parmesan/Romano cheese grated
- 1/2 Tsp - Red Pepper Flakes
- Fresh Basil to garnish
- Salt to taste
Directions
- Bring a large pot of water to a boil. Add a small handful of salt
- Cook pasta for 10-13 minutes until al dente and reserve 1 cup of water for later
- Heat the oil in a skillet over medium high heat
- Mince for finely dice the onion, add to the skillet and sauté for 5 minutes
- Add minced garlic, salt and red pepper flakes. Stir and cook for another 2 minutes
- Add tomato paste and stir heavily - flattening out in pan for 5 minutes
- Deglaze the pan with vodka, stirring constantly and add heavy cream. Stir until sauce is smooth and creamy
- Drain pasta but do not rinse. Add pasta to the sauce with the reserved water and stir over medium heat until it starts to thicken
- Serve immediately w/ basil garnish and grated cheese
